Ingredients:

1 cup sugar

1 cup (2 Sticks) unsalted butter

4 eggs

2 ½ cups all purpose flour

2 tsp. baking powder

1 tsp. baking soda

1 tsp. salt

3 tsp. vanilla extract

1 cup sour cream

¾ cup walnuts, chopped 

1 cup fresh cranberries, chopped

Directions:

  1. Preheat oven to 350 degrees. Grease and flour on a tube or Bundt pan (or use 2 loaf pans).      
  2. In a mixer bowl with a paddle, cream the sugar and butter together until smooth, and fluffy. Add the eggs, one at a time.
  3. Sift together the dry ingredients in a separate bowl.
  4. Add about one third of the dry ingredients to the mix. Then add one third of the sour cream. Continue alternating the dry ingredients with the sour cream. Add in the vanilla. Blend together well.
  5. By hand, mix in the cranberries and the walnuts, until they are lightly mixed in. Do not overmix or cranberries will color the batter.
